To keep your starter vibrant and thriving, follow these simple guidelines:
🌾 For Daily Use: If baking regularly, store your starter at room temperature and feed it daily with equal parts flour and water (by weight).
❄️ For Occasional Use: If baking less frequently, keep your starter in the refrigerator, feeding it once a week. Before each feeding, discard 50 grams and refresh with equal parts flour and water.

For best results, we highly recommend avoiding gluten-free flour blends, as they often contain additives that can disrupt fermentation. Instead, feed your starter with brown rice flour, cassava flour, or quinoa flour—pure, single-ingredient flours that support a strong and active culture.
